  • In a medium pot, over medium/high heat, sautée the onion in the olive oil. add all the rest of the ingredients, except for the peanut butter, and cover with a bit of water, and let cook down for 20 minutes.
  • Add the peanut butter.
  • If it looks too thick, add a bit of water.
  • Serve over rice.

  1. Yum is right! This dish is fantastic. I was wondering how the PB would match with the other ingredients, but it works quite well, surprisingly. I added in a bit of cauliflower for some extra veg/crunch -- delicious! [Made & reviewed for one of my adoptees in this Spring's PAC]

I am a young aspiring chef from Montreal. I'm a student cook and I work as a barista (fun times!!!) and I have seriously busy days that lasts forever, so now i love quick fix recipes that takes no time to whip up at 11 pm when i get home. Well i was vegan, now I am back to an lacto-ovo diet for the sake of my class. I have to taste meat at school, and I'm ok with that. But at home, only farmer eggs, happy cow milk that comes from small farms.... and yummy honey from my hometown, Percé, Quebec.
