This IS a very chewy cookie! I doubled the amount of ginger and it was very nice! A bit sweeter than what I'm used to.

Directions

  1. Cream butter and sugar.
  2. Add egg, syrup and molasses.
  3. Mix in sifted dry ingredients.
  4. Cool dough overnight or at least 4 hours.
  5. (If you are in a hurry I have put the dough in freezer for 1/2 hour or so.) Roll small balls (small tbls) and roll in sugar.
  6. Place on greased cookie sheet.
  7. Bake 350 degrees 10-12 minutes.
  8. Don't overbake.
  9. Note from Mariane: I sometimes even use almost 1/3 c each of the syrup and molasses.
  10. Makes them chewier.
