Margo's Can't Eat One Piece Cherry Pie

I am the first one to say no to Cherry Pie, but this is wholy different ... I not only said yes to one piece but two. As did Uncle Charlie ... I think he had three pieces. Plus it is super easy to make.

  1. In a bowl, combine the first 6 ingredients; pour into pasty shell.
  2. For topping, combine sugar, flour, cinnamon and nutmeg in a small bowl; cut in butter until mixture resembles coarse crumbs. Sprinkle over filling.
  3. Bake at 375F for 50-60 min or until bubby and golden brown. Cover the edges of the crust during the last 20 minutes to prevent over browning.
  4. Cool on a wire rack.
  5. ** Can be made with Plums as well.

This pie was so much fun to make! I got to use my new cherry pitter which made making this pie with fresh cherries a breeze! The flavor is wonderful and so easy with a crumb topping. I used recipe #51537 which worked beautifully. I needed to use foil over the crust during the last several minutes of baking time, as I needed to bake about 20 minutes longer than the time given to brown the topping. I am a very inexperienced pie maker. I am so pleased with how this pie turned out. I love how the filling thickened enough to hold together when each slice was cut. I knew my cherries were tart so I bumped up the sugar to 1 cup and I also added 1/4 t. of almond extract. Many other cherry pie recipes include almond extract so I thought it would work in this recipe also.

This cherry pie was delicious. I made it with a lattice top instead of the crumb topping. DH and DS ate the whole thing. Miles ahead of store bought. Thanks for sharing!
