Margarita Cupcakes

"I made these for Cinco de Mayo this year. They were absolutely delicious! I used Sauza Margarita Mix with the tequila already in it. It was only $9 for a box, which is equal to a 1.75 L. Very tasty! I also added some lime juice for extra zing! For the frosting, I mixed in a little bit of margarita mix with the cream cheese frosting and added some lime juice. I put it in a ziploc bag so that I could pipe the frosting easily. Be creative and add a little straw, umbrella, or a sugared lime! These are sure to be a hit at any party!"

  • 12 ounce orange juice
  • 3 large egg whites
  • 2 tablespoons vegetable oil
  • 1 lime, zest of
  • 1 (16 ounce) can cream cheese frosting
  • green sprinkles

  • Preheat oven to 350 Degrees.
  • Line 24 muffin tins.
  • Mix wet ingredients.
  • Add to dry ingredients.
  • Beat low for 30 sec.
  • Beat Medium for 2 minute.
  • Fill each one 2/3 of the way full.
  • Bake 20-25 minutes.
  • Frost after cooling.
  • Top with green sprinkles.
