O'kay did not do as quite directed but I hate pounding out chicken and rolling it so just slit it and tucked in the cheese slices and followed through but the breasts were large and the cheese leeched out more than I would have liked so if doing again with such large breasts I would give them 2 or 3 slits and stuff the cheese into each slit and make as directed. I did use a mixed herb mix into the breadcrumbs to season them and then :oops: realized I forgot to add the oregano to the butter but honestly don't think it was needed. Thank you HokiesLady for a recipe that I will venture with, made for Went To Market.

These were really good! My chicken breasts were really big, so ended up only making four. Used Jarlsberg cheese instead of mozz. because that is what I had on hand in a slice-able cheese. Will make again!

Mine turned out looking just like Nimz's photo! But I did use the smaller amount of butter, and skipped the oregano. I really enjoyed these, they were moist and juicy, and the cheese added a little bling! Thanks so much for posting. Made for Zaar 123 Special 4 December Tag 2008!

Super simple and a great result! I added a slice of proscuitto and just rolled them, not even bothering to secure the ends with a toothpick. It worked out perfectly. Someone noted that it would be great with a sauteed asparagus spear in the middle of each roll up, which I will try in the near future. I would definitely recommend this to anyone from beginner cook to experienced chef looking for a quickie meal that's tasty.

This was so good. Very very moist on the inside at 40 minutes of cooking time. I also skipped the butter, therefore forgot about the oregano. But it turned out great anyway. Nice and crisp on the outside and so juicy on the inside with a cheese surprise. Thanks Made for SSC Pet Parade

This is such a fast and easy put-together Melissa. And the bonus being it looks like you've spent oodles of time. I used pepper-jack cheese instead of moz, only because the fam likes things jacked up a bit. But, they said the coating of bread crumbs and oregano came thru more than the cheese did? Go figure. I also followed Duchick's advice and used only 1/4 cup butter as the drizzle and then sprayed with an oliveoil Pam spray. Made it nice and crispy/crunchy. Served with a bed of chicken flavored vermicelli rice. Yummy!! Tagged and reviewed for 123HitWonders 08'

Wonderful, easy and impressive chicken dish! This went together so quickly, yet looked and tasted like I fretted a long. I used Panko crumbs and skipped the melted butter over the top, trying to save calories. Instead of the butter, I sprayed each roll-up with butter flavored Pam. They browned wonderfully with a nice crunch on the outside and a juicy, tender inside wrapped around that oozy mozzarella. I'll definitely make this again...and again... Thanks HokiesLady!
