I used a precooked short grain brown rice which made this a snap to put together. Not having red cabbage I used finely shredded green and a purple bell pepper. Very nice. Made for ZWT9.
We loved this rice dish. I made extra rice the night before in anticipation for this dish so the next day everything was ready. It went together quickly and easily! I used cajun seasoning by mistake, but luckily it is from the same region. We loved it with the cajun seasoning and next time I will make it with the creole. Thanks Sharon! The quantities are wrong for 8 cups of rice... I made it for a bachelorette party, and after adding all the ingredients to the 8 cups of cooked rice, it didn't taste at all: so I added three times all of the ingredients, and 6 times the amount of creole seasoning until it finally was great tasting. People loved it!
I used 2 cups rice and 1/2 cup mayo, then kept everything else the same. The salad was great, and rolling it into lettuce leaves gives it a great touch. It has great colors: purple, green, and yellow. It has a very refreshing taste and would be a great addition to any summer picnic
A really beautiful salad. I used half the rice and mayo, but kept the other ingredients the same. I used red and green peppers, and the salad looked like confetti! A nice flavor combination for a delicious cold rice salad with a nice little crunch. I will make this again..and might serve hot or cold.
