Maple Walnut Pancakes
- 1⁄3 cup maple syrup
- 3⁄4 cup soymilk
- 1 organic egg
- 1 cup bisquick low-fat baking mix
- 2 tablespoons olive oil
- 1⁄4 cup chopped walnuts
- In a bowl, combine maple syrup, milk and egg.
- Stir in Bisquick mix, oil and walnuts with a fork just until mix is moistened.
- Cook on hot griddle until bubbles form on top.
- Turn to brown the other side.
- Serve with maple syrup.
