This is from IGA's list of recipes. Since I'm always on the lookout for new salad dressings this piqued my interest. This goes well with leafy greens such as curly green and red lettuce. But I'm sure it goes well with other salads as well.
- 2⁄3 cup olive oil
- 1⁄3 cup cider vinegar
- 1⁄4 cup maple syrup
- 1 teaspoon orange zest
- 1⁄2 teaspoon Dijon mustard
- 1⁄2 teaspoon thyme, finely cut
- salt and pepper
- In a bowl combine all of the ingredients together. Refrigerate.
- Just before serving whisk together vigourously to make sure it comes together.
This is a tasty dressing, and a great base for an asain style dressing. Just add a bit of sesame oil and cut back on the olive oil. I might even go with a lighter tasting oil like grape seed , but go with what you like.
This was wonderful. I loved the sweetness of the maple syrup mixed with the tang of the cider vinegar.
A wonderful vinaigrette which I enjoyed on my mesclun salad. I too decreased the oil to vinegar ratio - I like my dressing tangy, and the maple syrup made up for the sweetness. The orange was a great addition! Made for Adopt a Tag - and enjoyed thoroughly! FT:-)
