- 1⁄4 cup maple syrup
- 8 ounces cream cheese
- 1 1⁄2 cups crushed pineapple (do not drain)
- 1⁄2 cup pecans or 1/2 cup walnuts, chopped
- 1 (8 ounce) Cool Whip
directions
- Soften cream cheese in microwave for 30 seconds.
- Mix maple syrup to softened cream cheese, cool.
- Stir in pinapple and pecans.
- Fold in cool whip.
- Chill or freeze if desired.

It's nice to find a dessert like this that's so good, yet pretty healthy (like Nick's Mom, I made it with lite Cool Whip and low-fat cream cheese). I didn't have anywhere near a half-cup pecans but I chopped what I had up very fine and that gave it enough suggestion of crunch and nut flavor, I think.

Rich and delicious! The maple syrup adds just a touch of sweetness and a yummy flavor you can't quite put your finger on. I used reduced fat cream cheese, and lite cool whip. I froze a small portion and DS declared that was the way he wants his served. We had this for dessert, sprinkled with a few almond toffee bits. Thanks so much for sharing. Nick's Mom
