I made this again recently. Great flavour. It was worth making my own pastry for this. I followed the recipe, but I was careful at step 6, as things can go wrong here. It also took longer to bake in my oven. Thanks for posting :)

  1. Preheat oven to 350 degrees.
  2. Place 1 cup each of water and maple syrup in a saucepan and heat to boiling.
  3. Add salt and butter.
  4. Mix cornstarch and 1 tbsp cold water and add to egg yolks.
  5. Beat well.
  6. Add hot syrup gradually to egg mixture and cook over low heat, stirring constantly until thick.
  7. Cool slightly.
  8. Strain into pie shell.
  9. Beat egg whites until stiff.
  10. Slowly add remaining tbsp maple syrup.
  11. Spoon over pie.
  12. Form into peaks with the back of the spoon.
  13. Bake 12-15 minutes, or until golden brown.
