An old fashioned dessert sauce courtesy of the United States Regional Cookbook, published in 1947.

  1. Boil maple syrup and water in saucepan to 228F on the candy thermometer.
  2. Beat egg whites until stiff.
  3. Add syrup gradually, beating constantly with the egg beater.
  4. Add the lemon juice.
  5. Fold in the whipped cream.
