Maple Glazed Acorn Squash Rings

This is a nice complement to ham or rotisserie chicken

Directions

  1. Cut squash crosswise into 4 1 inch slices; remove seeds. Place squash on microwave safe plate. Cover with plastic wrap, vent. Microwave HIGH 6 minutes or until tender.
  2. Preheat broiler.
  3. Place squash on baking sheet. Combine syrup and other remaining ingredients. Brush syrup mixture over squash. Broil 3 minutes or until bubbly. Drizzle with remaining syrup.

I used this as a jumping off point. I changed too much to rate this recipe appropriately, but wanted you to know that the idea produced a wonderful side dish tonight. I cut and cooked the squash as directed. Then I mixed 2 tbsp. of sugar free syrup with the nutmeg and brushed it on the squash. I broiled it for 2 minutes, then brushed some more on, and broiled for another 2 minutes. Sweet and lovely to complement the lentil loaf and cornbread tonight. Thanks.
