This dressing is especially good on mesclun or baby spinach. Tastes better if refrigerated a day ahead.
- 3⁄4 cup olive oil or 3⁄4 cup vegetable oil
- 1⁄4 cup balsamic vinegar
- 1⁄4 cup maple syrup
- 1⁄4 cup Dijon mustard
- 2 cloves minced garlic
- 1⁄4 teaspoon pepper
- Very simple.
- Combine all ingredients in a jar and shake well.
- Shake again before serving.
I love this dressing, but have changed the proportions significantly for my tastes. 1/4 cup oil, maple, and balsamic, and just 1 TB mustard
I can't stop making this dressing.. it's delicious! I serve it over a bed of baby romaine, dried cranberries and spicy candied pecans. Thanks Jan for our new favorite salad dressing!
