Taken ages ago from the website ' About ' when looking for recipes using maple syrup - I have not made these but certainly intend to have a go .Preparation time does not include soaking the beans. UPDATE - I have since made this recipe and the flavours are very mild - too mild for me so you might want to be a bit heavy handed - I also added a can of diced tomatoes and cooked them for an extra hour.

  1. Place beans in large saucepan and cover with cold water.
  2. Bring to the boil and simmer 2 minutes.
  3. Remove from heat and stand covered for 1 hour.
  4. Drain and reserve liquid.
  5. In a small bowl combine syrup, sauce, onion salt and mustard.
  6. Place 1/2 the beans in a 1 quart casserole dish.
  7. Top with diced pork or bacon.
  8. Add remaining beans.
  9. Pour maple syrup mixture over beans.
  10. Add 1 1/2 cups of reserved bean liquid.
  11. Cover and bake at 300 degrees for 2 hours.
  12. Stir occasionally and add more reserved liquid id need be to keep beans moist.

The recipe was reduced to 1 pound of beans which were soaked overnight and then cooked in the crock pot with 2 slices of thick cut bacon. Additional warm water was added as the beans cooked. I held off salting until the beans were just tender. About 30 minutes before serving the beans were placed in the oven to develop more of a baked bean texture. They got rave reviews! Made for Aussie Swap.

I don't like tomato flavored beans. So when I saw this recipe I knew I would like it. It's not too sweet, just the right touch of sweetness. I used real maple syrup. I used bacon. I omitted the salt. I had to cook the beans longer and after 2 hours, I heated the oven to 400 F. It helped a lot. Thanks Katew :) Made for the Aussie Swap for November 2010

I used canned white beans only because that is what I had on hand so therefore I skipped the first three directions. I also used Aunt Jamimia maple syrup which probably wasn't what the chef had in mind. I also used 2 slices of bacon. Loved the flavor and I will be making this again. Made for Bargain Basement tag 2009.
