  • 1 tablespoon butter
  • 2 teaspoons grated fresh ginger
  • 1 bunch scallion, chopped (reserve 2 T of the green part for garnish)
  • 1 lb carrot, peeled and sliced into 1/4 inch rounds
  • 2 teaspoons grated orange zest
  • 1 cup orange juice
  • 3 tablespoons maple syrup
  • 1 tablespoon chopped fresh lemon thyme
  • salt and pepper


  1. In a medium saucepan, melt butter.
  2. Add ginger and the white part of the scallions and sauté for 1 minute.
  3. Add carrots, orange zest and juice.
  4. Cover pan, bring to a boil, then reduce heat and simmer until carrots are just tender, about 12-15 minutes.
  5. Add maple syrup and lemon thyme and cook uncovered, stirring frequently until the liquid becomes syrupy, about 5 minutes.
  6. Add salt and pepper to taste. Serve garnished with chopped scallion tops.
