Manwich Style Enchilada Casserole

"Old PTA organization cookbook from my hometown, early '80's. I love Mexican casseroles, this one sounds different. This is one of those dishes that you can make changes, I will probably add some cumin and maybe a little hot pepper sauce next time."

directions

  • Saute' ground beef, onion and garlic in 10-inch skillet until beef loses redness. Drain fat.
  • Add seasonings, Manwich and water; simmer 3-5 minutes.
  • In a 1 - 2 1/2 quart casserole, arrange alternate layers of tortillas, meat sauce and cheese until used up.
  • Bake at 350 for 20 - 25 minutes.

  2. Made this for dinner last night..easy,not much fuss.I added a can of drained & rinsed black beans, cumin seed,& some frank's red hot sauce. Used tex-mex shredded cause i didn't have cheddar.Was delicious.Hubby took some for lunch today.Will make this again!!! Deb.

  4. OK... I am a Manwich freak - lived on it it college lol. I loved this! I made it like a lasagna. Used Lasagna noodles and layered as stated. I also added more onion and about half of a green pepper. Thanks for a new idea on an old favorite!

Instead of using tortillas I used lasagna noodles and I added 1 small chopped onion and 1/2 a chopped green pepper to the mix to get more veggies into it. Because of the noodles I cooked it at 375 for 40 minutes. THANKS SO MUCH FOR POSTING THIS!!
