A Finnish recipe perfect for an easy dessert when strawberries are in season!

This is a great recipe and I used it to top some fresh angel food cake slices. I could not find strawberry juice so I used the advice of another reviewer and pureed some fresh strawberries and created base that way (I know it is not as thin as a juice but it seemed to work well.). I did cut the sugar back as the strawberries were so naturally sweet that I just did not think they needed all the extra white sugar. Thanks for a great recipe!
- 500 g fresh strawberries (steams removed)
- 4 tablespoons cornstarch
- 1 liter strawberry juice
- 2 cups white sugar
- 2 tablespoons water

- We wash well the strawberries.
- Add the cornstarch in the pot over medium heat stirring well until we have a cream. Then we put the strawberries inches.
