Another great recipe from George Foreman.
- 2 cups mangoes, chopped
- 3 ripe tomatoes, chopped
- 1⁄2 cup purple onion, chopped fine
- 2 tablespoons fresh cilantro, chopped fine
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 tablespoon lime juice
- 1⁄2 teaspoon pepper
- 1⁄2 teaspoon salt
- Lightly mix all ingredients in medium bowl. Chill to serve.
Really loved this. We had it with Presto Chicken. DH has suggested that we use it in burritos the next time we have them. UPDATE: Had it with chicken burritos the other night and it was fantastic. Gave a really nice mild fuity taste to the dish.
