A unique, exotic dessert made with very fresh ingredients. This recipe comes from the famous Spanish chef "Borja Blázquez", who has his own tv show on the "Elgourmet.com" channel.
- 1 mango
- 150 g strawberries
- 1⁄2 bunch basil
- 150 g sugar
- 150 ml water
- 400 g pineapple sorbet
- 2 strawberries, for decoration

- Bring the water to a boil with the sugar and make a syrup. Let it boil until it evaporates 70% of its original volume. Once it cools, add the basil, well chopped. Put the 2 strawberries in the freezer; these will be grated over the "quenelle" of pineapple sorbet at the last moment. Clean the 150 gr of strawberries, slice each stwaberrie in halves or 4 halves. Peel the mango and cut in the same size as the strawberries. Mix the mango with the strawberries and add a pinch of sugar.
- In a plate, lay the mix of mango and strawberries, drop over the fruits some basil syrup and also decorate the plate with it. Add one "quenelle" of pineapple sorbet over the fruits or on one side of the plate, and grate the two frozen strawberries over the pineapple sorbet.
