Mango Salsa

"Easy to make and goes well with fish or chicken. Adapted from Cooking Light. I recently served this with Recipe #182766 soft taco style with romaine and avocado."

  • Combine all ingredients in a bowl. Add salt and pepper to taste. Chill for an hour or so.

  2. A very nice salsa, that mixed well using all items on hand, expect I only used 1 mango. I don't think this makes any difference, because this turned out as refreshing and totally yummy as one could imagine.
     
  3. I made this some time ago, but to circumstance had not rated it yet. I really enjoyed it and will make it again. I wonder if It would work with pears (they are sweet as well, and my tree is loaded with them. Leanne
     
  4. Excellent! I've never had mango salsa before so I have nothing to compare this to, but I can't imagine finding any recipe that would result in a more refreshing salsa. I live in Los Angeles County. Married 25 years. 3 kids ages 24, 21 and 12. I'm a math professor and a computer tech. The picture above is me running in the Los Angeles Marathon (the first time I did it) on March 4, 2007. I'm smiling because the picture was taken at mile 3. I wasn't smiling by the end. LOL. I've since done the Long Beach Marathon in Oct. 2007 and I did L.A. again in March 2008. The third time was the trick. I finally had a good race and I qualified to run the Boston Marathon which I did in April 2009. Now I'm into triathlon, since summer 2009.
