A dessert with the flavors of India from The Vegetarian Passport. The number of balls the recipe makes depends on how large you make them.
- 1 1⁄4 cups dried mango
- 1⁄2 cup shredded coconut
- 1⁄4 cup sesame seeds
- 1⁄4 cup cashews
- 2 tablespoons mango juice
- Place all ingredients except mango juice in a food processor and blend until fairly smooth.
- Add juice, a bit at a time, until you have the right consistency to form the mixture into balls.
- Form into balls and allow to harden.
