  • 3 large ripe mangoes
  • 2 lemons, juice of, strained
  • 4 egg whites, room temp
  • 1 pinch salt
  • 12 cup sugar
  • 1 cup cold cream

  • Purée the mangoes, better done in a food mill. Stir in the lemon juice.
  • Whip the whites with salt in a clean bowl. Add sugar, a little at the time, until stiff, but not dry. Fold into mangoes.
  • Whip cream stiff, fold into mangoes. Chill 4 hours before serving.
