Yum! I had only 1 mango so I added a bunch of other fruit! Yummy! I placed it over creamy greek yogurt! Thanks! made for ZWT5.
This was almost like having a fruit salad and a cocktail all in one. I halved the recipe and served it along side with your Baked Coconut Shrimp for a lunch with a real Caribbean vibe. I did make a couple little embellishments..I sprinkled the finished salad with some flaked coconut and and bit of the lime zest and that worked well for both taste and visual appeal. When I got done eating the mango, there was still a ton of the lovely rummy juices in the bottom. I am not at all ashamed to say that I lifted up the bowl and drank it down :) Now, I feel like I should be jammin with you under the tropical sun! Made for Chow Hounds on ZWT5.
Awesome! The sweet mangoes and the tartness of the lime, combined with a that deep, delicious rum flavor was incredible. Fresh, light and original. I used Myer's Jamaican rum which has an incredible richness. I am so fond of this salad. Thanks, chia, for another winner! I really recommend this recipe.
A classic Caribbean mixture of flavors--wow, what a really versatile dish! I made this yesterday and had some spooned over baked tilapia, and then had some more over some vanilla frozen yogurt I was using up. Scrumptious!
This was delicious!! I used this as a dessert itelf instead of an accompaniament or condiment and it filled the role wonderfully! Reminded me of peach pie filling with the added tang from the lime juice.
