this is listed in bon appetit as a side accompaniament for cheesecake, but this goes well as a condiment for hot and spicy shrimp as well
- 3 large mangoes, peeled,pitted,diced
- 5 tablespoons light brown sugar
- 3 tablespoons fresh lime juice
- 1 lemon, zest of
- 2 tablespoons dark rum
- mix all ingredients in a large bowl, tossing occasionally.
- let stand at room temperature for 30 minutes.
- serve at room temperature, or chilled.
This us really delicious. I had to stop myself from just eating it straight out of the bowl with a spoon! Had this as an accompaniament to some cajun spiced fish the other night. Thanks Chia
Yum! I had only 1 mango so I added a bunch of other fruit! Yummy! I placed it over creamy greek yogurt! Thanks! made for ZWT5.
This was almost like having a fruit salad and a cocktail all in one. I halved the recipe and served it along side with your recipe #48303 for a lunch with a real Caribbean vibe. I did make a couple little embellishments..I sprinkled the finished salad with some flaked coconut and and bit of the lime zest and that worked well for both taste and visual appeal. When I got done eating the mango, there was still a ton of the lovely rummy juices in the bottom. I am not at all ashamed to say that I lifted up the bowl and drank it down :) Now, I feel like I should be jammin with you under the tropical sun! Made for Chow Hounds on ZWT5.
