  • Peel mangos and remove edible fruit, leaving the core alone.
  • Place mango into food processor and and puree until smooth.
  • Place butter into bowl of stand mixer with sugar and vanilla. Turn the mixer on the lowest setting until the sugar starts to incorporate into the butter.
  • Slowly add mango puree, about 1/4 cup to start, and then turn the mixer on medium-high speed. Add more mango puree as needed to achieve your desired consistency. Mix frosting for two minutes, stop to scrape down the sides and bottom, and then mix for one more minute.
  • Enjoy!

  1. This was a great recipe, but I do agree with that I didn't use as many mangos as instructed. I think it depends on how ripe and big the mangos are. I used about 1 1/2 and omitted the vanilla and it was a very true mango taste. I just cut the mangos up into 1/4 inch pieces and beat them into the icing so there was in the end tiny bits of mango which was a welcome treat while eating them.
     
  2. Frosting was very watery. Tried to add more butter and icing sugar but didn't work. Don't use as many mangoes as it says.
     
  3. Very VERY watery. I tried adding more sugar but it turned even sweeter. Would not recommend.
