Not really a recipe, more of a serving suggestion. Very easy and the unique combination of flavors is delish. This looks pretty on the plate too. Use one of the small (3-4 inch) whole rounds of brie (camembert, goat cheese brie, etc).
- Heat the brie. You can put it in a warm oven for 30 minutes or microwave GENTLY for 3 to 5 minutes. You want the cheese to be runny on the inside but not running out of the rind.
- Pour the chutney over the cheese.
- Sprinkle the curry powder over the top.
- Serve with crackers. Water crackers work really well because of their neutral flavor.
So easy-to-fix, definitely best on soda or water crackers due to the mix of flavors & perfect to treat yourself or for unexpected guests. I think I need to practice warming the Brie in my microwave. The rd was intact till I cut the 1st bite & the cheese oozed out. Maybe I will be lucky, keep practicing for a very long time & never quite get it right. :-)
