This was just okay. We found it too sweet and even though I halved the cinnamon, it overwhelmed the flavor of the mango. I also think the mango would have been better pureed than diced. Made for PAC Fall '07

  1. Preheat oven to 350°F.
  2. Grease and flour 9x5 inch loaf pans.
  3. Sift the flour, baking soda, baking powder and cinnamon into a small bowl.
  4. In a large mixing bowl, combine eggs, smart balance, and sugar and mix with dry ingredients until well blended.
  5. Fold in mango and then pour into loaf pans
  6. Bake for 45 to 50 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool 10 to 15 minutes, unmold and let completely cool on baking racks.
