I found this recipe on the alohaworld website (http://alohaworld.com/ono) and just adore it! I'm always looking for a good banana bread recipe and this one fits the bill! It's moist and has a nice crisp, almost caramelized crust. Now if I could just figure out how to keep the crust during storage!
Combine dry ingredients in a large bowl. Make a well in the middle and add other ingrediendt. Mix thoroughly. Pour into a greased loaf pan and let stand for 20 minutes. Bake at 350 for 45 minutes to an hour or until nicely browned and the "skewer test" comes out clean or with just a few crumbs.
I was very disappointed with this recipe. It didn't have very much flavor, and I felt like the huge amount of fat in it actually prevented you from tasting anything else. I will not make this again.

I made this for hubby's work and they loved it. I forgot to add the melted butter but it was still good. I also added in coconut but no nuts or raisins. I had to cook it for 10 more minutes because the inside wasn't done. A good way to use up mangoes from my tree.

I loved this bread! I thought the banana and mango was a delicious combination.I recently made just plain mango bread but I prefer this one with banana.I only had one large mango so I added an extra banana.I left the coconut out but I did add the raisins which I really liked in this.I also used applesauce in place of half the oil.This bread was extremely moist and delicious.I will definately be saving this recipe.
