  1. Heat oil in large saucepan and brown meat and onions for 10 minutes over medium heat.
  2. Add tomato, seasonings, and 2 cups water.
  3. Cover and simmer for 1 1/2 hours until meat is tender.
  4. Add remaining water and bring to a boil.
  5. Add manestra (orzo).
  6. Stir once or twice.
  7. Simmer 20 minutes more.
  8. Serve hot with grated cheese.
