Yum! These muffins turned out to be very flavorful and tender. I reduced the amount of brown sugar to 1/2 cup and the muffins were still nicely sweet. I sprinkled the top of the muffins with sugar in the raw. I did not chop up the mandarin oranges but they broke up a bit when I stirred them into the batter. This recipe made 18 regular sized muffins.
Very tasty! I used about half whole wheat flour, and I replaced almost all of the melted butter with unsweetened applesauce and the rest with melted margarine. The muffins are moist and flavourful, and a hit with children and adults alike! I baked my standard-sized muffins for about 18 minutes, and my mini muffins for about 12 minutes.
Not the description, not the reviews, prepared me for this recipe. These are the most amazing, flavorful, hug myself muffins I've ever eaten. The best bakery or restaurant muffin does not compare. Thank you for this treasure that I'm passing down in the family.
Yum! These were great! I used raisins instead of cranberries since we had a large bag. Made these to use up some mandarin oranges my toddler decided he no longer likes even though he asks for them. He likes these muffins, though. I made into mini muffins and have a ton in the freezer! made for Zaar Cookbook Tag.
Another great muffin recipe..Thanks..made these for wife's sunday morning breakfast in bed treat..super..5 more brownie points..didn't have orange extract so used a bit of orange zest..perfect..

These were very good muffins. Orange & cranberry is a favorite combination of mine, and they worked well together in these muffins. They were easy to put together. I brought them to a church comp this weekend & they were enjoyed by all.
Good muffins I used sultanas as I ran out of cranberries. Saved some over and they were just as nice the next day. I will be making these again. Thanks Bliss
