  1. Cut beef into thin strips.
  2. Mix egg white, cornstarch, 1 teaspoon soy sauce and sugar in a bowl.
  3. Let stand for 10 minutes.
  4. Spray wok with cooking spray and heat over medium high heat until cooking spray starts to bubble.
  5. Add oil, rotate wok to coat with oil.
  6. Add beef, stir-fry 3- 4 minutes or until brown.
  7. Add carrots, capsicum, garlic and ginger, stir-fry for 1 minute.
  8. Stir in chile puree, 1 teaspoon soy sauce and shallos, cook and stir 30 seconds.

I believe you would use the egg white mixture as a marinade. This is a really good dish. Easy to prepare and very flavorful.

This was very tasty. I too wasn't sure where to put the egg white mixture, so like the previous reviewer, I put it in at the end. If I make this again, however, I'll put it in after step 6. This had a very nice flavor to it.

You were right - easy, tasty and quick! I served over rice and added onion. Also used peanut instead of veggie oil, and added extra soy and chili. I was a bit confused about when to add the egg white mixture, I ended up throwing it in at the end. Thanks for a good recipe Sueie!
