Mandarin Almond Salad

- 4 tablespoons sugar, divided
- 1⁄2 cup slivered almonds
- 1⁄4 cup vegetable oil
- 2 tablespoons red wine vinegar
- 1 tablespoon minced fresh parsley
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 1⁄8 teaspoon hot pepper sauce
- 1 bunch red lettuce, torn
- 1 (11 ounce) can mandarin oranges
- 1 small red onion, sliced
directions
- In a small skillet, melt 3 T sugar on low heat.
- Add almonds; stir until coated.
- Cool, break into small pieces and set aside.
- In a jar with tight lid, mix oil, vinegar, parsley, salt, pepper, hot pepper sauce and remaining 1 T sugar.
- Shake well.
- Combine lettuce, oranges, onion and almonds in salad bowl.
- Shake dressing;,pour over salad and toss.

Excellent Salad! It's a little bit out of the ordinary and it's very appealing to the eye. I have made this many times and have substituted both romaine and/or baby spinach with excellent results. It's great to take to a pot luck as well - just throw all the greens into a plastic bag and just before serving, toss in the almonds, mandarins and dressing. Give the bag a good shake and you're good to go. Thanks MizzNezz!

DH & I are in Dallas visiting *SusieQusie* & we had the pleasure of eating SQ's version of your salad w/a dinner meal. It is yummy good made w/broccoli slaw instead of lettuce, even better the 2nd dy & a great way to add veggies to a meal. Loved the dressing! Thx for sharing your recipe so we could share it here.

Outstanding salad! I lightened it some by using drained off mandarin orange juice to replace half of the oil. For the greens, I had part of a bag of broccoli slaw mix that needed using so I tossed that in with the lettuce. I halved the recipe for the 2 of us and we ate every last morsel. Thanks for posting this winner!

My MIL had made this salad for us years ago and we absolutely loved it! I must admit I was a little bit skeptical to say the least but it really is delicious! Every time I've made it for Church functions I get tons of people asking for the recipe. When we moved a couple years ago I miss placed the recipe so I was delightfully surprised to find it here.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
