- 6 -8 large baking potatoes
- 2 cups boneless skinless chicken breasts, cut into strips
- 1 cup broccoli, cooked and coarsely chopped
- 1 cup green onion, sliced
- 1 1⁄2 cups milk
- 4 tablespoons butter
- 6 slices bacon, cooked and coarsely chopped
- 1 garlic clove, minced
- 1 cup fresh mushrooms, sliced
- 1 tablespoon oil
- 2 cups cheddar cheese, grated
- salt

directions
- Preheat oven to 425.
- Bake potatoes until soft on the inside.
- Remove potatoes from the oven, cut just enough of the top off of the potato to access the inside.
- Remove all the insides and dump into a large mixing bow, add milk and butter.
- Mix with mixer until all lumps are removed, salt and pepper to taste.
- Heat oil in a skillet until hot; add mushrooms, onion, garlic and broccoli, sauté until tender.
- Fold mushroom mix, bacon, and chicken into mashed potatoes.
- Take the potato, mushroom mix and stuff it into the potato skins.
- Once the potatoes are stuffed, place back cookie sheet and bake in oven at 325 for 30 minutes.
- Remove from oven top generously with cheddar cheese, return to over for 5 minutes or until cheese is melted. Remove and serve.
