  1. Marinade:.
  2. Slice the chicken into 2 inch slices.
  3. Place chicken in a stand up mixer bowl.
  4. Add the water, wine, soy sauce, oil, white pepper, garlic powder and baking soda.
  5. With the dough attachment, mix on low for about 30 minutes.
  6. Place the chicken in the fridge to marinate over night.
  7. Brown Sauce:.
  8. In a saucepan over medium heat, add the chicken broth, sliced garlic, and ginger. Simmer for about 10 minutes.
  9. Add the teriyaki sauce, soy sauce and brown sugar. Let sauce reduce until you have roughly 3 cups.
  10. Strain out the garlic and ginger.
  11. Mix the cornstarch with the cold water and mix well (no lumps).
  12. Add the cornstarch/water to the sauce. Bring to a boil and the sauce should thicken. Its should be a little thick, when a spoon placed in the sauce, it coats the back of the spoon.
  13. On a griddle on high heat add 2 tablespoons of oil. The oil should be smoking, you want the pan hot to ensure the chicken gets a golden brown color.
  14. Add the chicken pieces in batches in an even layer on the griddle, do not move the chicken around.
  15. Cook for 3-4 minutes, then take a large spatula and flip the chicken and cook for another 3-4 minutes.
  16. Serve the chicken with the sauce and rice.
