"make This Again" Rice Skillet

On one of those desperate nights when there was nothing in the house, I threw this together, and every single person in my family loved it!

  1. In a skillet that has a tight-fitting lid, over low heat, saute bacon.
  2. Add onion, garlic, potatoes, and spinach in that order, adding each as it is chopped and ready to go in the pan, continuing to cook over low heat, and stirring occasionally as you go along. (Any frozen green vegetable--green beans, peas, broccoli--can be used in place of the spinach. I recommend taking this opportunity to try getting those leafy greens into the kids, though. With the good bacon flavor in there, and the texture of the rice and potatoes, the greens do not offend!).
  3. Season with salt.
  4. Stir in rice and saute for a minute until it is thoroughly combined with other ingredients.
  5. Add broth/water, and bring to a simmer.
  6. Once the liquid simmers, put the lid on the skillet and set the timer for 20 minutes, and turn the heat as low as you possibly can.
  7. While the rice skillet steams, prepare any fresh vegetables or other sides you plan to serve.
  8. Set the table.
  9. When the timer rings, call the family. Presto! A dinner that will be loved by all.
