Make-Do Pink Sauce

- 2 tablespoons olive oil (or other oil you like)
- 1 large onion, diced
- 2 garlic cloves
- 1 large bell pepper, diced
- 4 medium tomatoes, diced
- 1 tablespoon cream
- 1 teaspoon catsup (one packet from a fast food restaurant)
- salt
directions
- Heat oil in a medium pan and saute onion, garlic, and bell pepper until the onion starts to turn translucent.
- Add tomatoes and about 1/4 cup of water (just enough to coat the bottom of the pan so the tomatoes don't dry up), cover, and let cook until the tomatoes fall apart, about 5-10 minutes.
- Stir everything so the mixture actually looks like tomato sauce. Boil off any excess liquid.
- Turn off heat and stir in cream, catsup, and salt. Add more cream if needed to achieve desired flavor and color.

I used the last tomatoes from my garden. I should have dice the onion very finely as they remain a little bit crunchy. My sauce didn't look like a tomato sauce. Unless I puree it in a blender. I added dried oregano and basil for more taste as it was a little bit bland for our taste. I used more cream (near 1/2 cup of half and half cream) I omitted the ketchup. Thanks for posting.
