Make-Do Pink Sauce

"This is a really cheap and easy pink sauce recipe. Great for when you only have a little time to make dinner and limited ingredients on hand.   • Heat oil in a medium pan and saute onion, garlic, and bell pepper until the onion starts to turn translucent.
  • Add tomatoes and about 1/4 cup of water (just enough to coat the bottom of the pan so the tomatoes don't dry up), cover, and let cook until the tomatoes fall apart, about 5-10 minutes.
  • Stir everything so the mixture actually looks like tomato sauce. Boil off any excess liquid.
  • Turn off heat and stir in cream, catsup, and salt. Add more cream if needed to achieve desired flavor and color.

  1. I used the last tomatoes from my garden. I should have dice the onion very finely as they remain a little bit crunchy. My sauce didn't look like a tomato sauce. Unless I puree it in a blender. I added dried oregano and basil for more taste as it was a little bit bland for our taste. I used more cream (near 1/2 cup of half and half cream) I omitted the ketchup. Thanks for posting.
