Make Ahead Honey Lime Chicken

"I found this recipe online but wanted to post it for the nutritional facts. This is a great make ahead meal. Perfect for when you need to provide a meal for a friend in need. Just pull out of the freezer, thaw in fridge and reheat!"

  • Sprinkle chicken with garlic salt.
  • In large skillet brown in oil.
  • Drain pineapple and save juice.
  • Add one fourth of the pineapple juice to skillet.
  • Cover and simmer 6 to 8 minutes until chicken is golden.
  • Remove chicken.
  • Add honey, lime juice, soy sauce, cornstarch and remainder of pineapple juice.
  • Bring to boil.
  • Cook and stir until thick and clear, about 1 minute.
  • Remove from heat and allow to cool.
  • Place chicken, pineapple rings and sauce in freezer bag.
  • Label and freeze.
  • To serve: Thaw in fridge.
  • Heat until sauce is hot and bubbly and chicken is heated through.

  1. We thought this was fantastic! I absolutely loved the sauce, we served it over buttered noodles. I didn't use it for make ahead, wanted to try it first...but I am definitely going to make several batches at once next time to freeze. I may try making the sauce without the cornstarch, and using it for a marinade, it was just so good!
     
  2. I ended up sitting for some friends of ours on short notice and this was on our two-week menu for the night. One of our friend's children told me "I don't eat chicken", but alas our rule is one family - one meal. I ended up increasing the honey to a little over 1/2 c since I knew my main audience was kids, and it turned out great! Mr. Picky wouldn't eat it until I said there was honey, then he took a bite, and then proclaimed "this is awesome!!" :)
     
  3. Excellent. We had it for diner tonight really loved it. I was worried that it would be overly sweet but it wasn’t. Light, refreshing easy and a family pleaser.

I'm just now getting into cooking. Because I am such a picky eater I never try anything new and my family always gets the same ordinary meals. I'm trying to change that by (slowly) experimenting with different recipes.
