Maia's Carrot Muffins

"This is the only way I can sneak carrots into my 2 1/2 year old daughter. The whole family likes them! The 3 parts can be prepared the night before and refrigerated uncombined to make the next morning. Also freezes well."

  1. I needed to adjust this recipe a bit. There is too much baking soda, there only needs to be 1 tsp. to each cup of flour. Also used 1/2 c. oil and 1/2 cup applesauce(more of a personal preference thing,) and next time I would add 1 c. brown sugar, since we use unsweetened applesauce. Great idea to soak the raisins before adding to the batter, and nice amount of carrots.

I love to cook and can, and I definitly love to try new recipes. I also like to garden when I'm not chasing around my 2 1/2 year old.
