  • Place all the ingredients in a bowl.
  • Beat until mixed well.
  • Pour into a greased flan dish.
  • Bake for about one hour at 175 degrees Celsius (325 degrees Fahrenheit).
  • When baked it will surprisingly have a base, a custard centre, and a coconut topping.

This pie is great as is,but I couldnt stop myself from playing around with it.Try adding 1/4 cup cocoa and a 1/2 cup (or more) of chopped almonds and a dash of almond extract.Almost like a fudgy almond joy.The coconut could be eliminated all together,but then I would up the almonds.I also did cocoa with a cup of peanut butter and some chopped peanuts,which was good too.Planning to try using brown sugar and pecans or walnuts.....
     
  3. This sounds really interesting, but is there anything anyone can think of that could be used instead of coconut?
     
  4. Have made something very similar to this pie, think it was called 'Impossible Pie', great flavours, the custard is a nice 'eggy' one and the top is golden and crisp. We had it with vanilla ice cream and tinned peaches. Thanks for posting. =)

I live in Australia but I am Spanish. I am a dressmaker by trade but find myself enjoying cooking more these days. I have a great collection of recipes, some from magazines and some my own which I would love to publish one day. Having had gestational diabetes two times in my pregnancies, I have now become challenged to create a book on low GI foods and recipes. I just need to get down and do it.
