Soup which takes less time to make than using canned? This I had to try when I found it in the magic bullet recipe book. Verdicts in - its a winner!
- 1 cup broccoli floret
- 1 garlic clove
- 1⁄2 cup vegetable stock
- 1⁄3 cup cream or 1⁄3 cup milk or 1⁄3 cup low-fat yogurt
- salt and pepper
- Place the broccoli, stock and garlic in the tall cup and fit the steamer lid.
- Microwave for 3 minutes.
- Add cream and fit the cross blade, blend until smooth.
Very easy to do and once you get the amount of salt and pepper to add down... the soup is fantastic. Only problem if you want to make more than the glass full it is a pain. The 1qt blender attachment will spill over at 4 servings and make a big mess as well as maybe not fitting in your microwave.
Very easy to make. I made this x2 for our light meal tonight. After blending in bullet I poured mix into a pot to which I had already simmered some chopped bacon in 1 cup water and 1tsp chicken stock powder (I used chicken stock for the base instead of vegetble stock), simmered a couple of mins and served with grilled cheese on toast. A winner :) Inot my 'keeper book' :)
