Made these for Christmas, but no need for a special occasion to make these. I like them in the morning w/ my coffee. You will need a madeleine mold.

This is an interesting recipe, but I don't think the results qualify as madeleines. *Larousse Gastronomique* defines madeleines as "a small cake shaped like a rounded shell." I followed the directions exactly, and I did not get cakes. What this recipe did produce is something more cookie-like. In fact, it reminds me of some of the Italian cookies I had when I was a child. They're good, but not madeleines. I wonder about the order of the directions given here, too. Why fold in flour, and THEN add the cooled butter? While mixing in flour I quickly ran out of liquid and the dough became hard to mix - had to use my fingers for this. Then adding butter after? Well, there's this dough, splooshing around in butter. Hard to mix in butter at that point, so, hmmm. Very odd.
- 4 eggs
- 3⁄4 cup sugar
- 1⁄2 teaspoon vanilla extract
- 1⁄2 teaspoon orange extract
- 1 1⁄2 cups all-purpose flour
- 1⁄2 cup unsalted butter, melted and cooled
Directions See How It's Made
- Preheat oven to 400°F.
- Put eggs, sugar, vanilla and orange extract in a medium-size bowl.
- Place over a pan of gently simmering water.
- Beat until very thick.
- Remove from heat.
- Continue to beat until cool and the mixture retains its shape for a few seconds after a spoon is drawn through it.
- Carefully fold in the flour.
- Gently fold in 1/2 cup of melted and cooled butter.
- Fill each mold 3/4 full with mixture.
- Bake at 400°F for 12 to 15 minutes or until lightly browned and springy to the touch. Remove from pans, patterned side up and sprinkle with powdered sugar.
