I made this a couple of days ago and simply love it. Like most all soups and stews this tastes best 1-2 days after being made. The change up of veggies from the standard North American veggie soup was a true treat. Had to use frozen okra (never seen fresh where I live in Canada) but everything else was fresh and on hand. It's a treat and I've printed it to keep in my personal keepers cookbook. If you would like to try something a but different and delicious give this one a shot. :D

  1. Cut the stems from the okra and slice.
  2. Melt the butter in a pot and saute the okra, celery and bell pepper and onion until soft.
  3. Add the tomatoes,paprika, black pepper and salt and stir well.
  4. Add the boiling water and simmer for about 1 hour, until the vegetables are all tender.
  5. Cooked left over chicken or other meat can be added to this soup.
