From The Best of Country Cooking Cookbook, c. 2003. I love mac 'n cheese, but with just the hubby and I, there is always way too much. I love that this recipe is just for two - though I'm sure it could be doubled or tripled to feed more. Cooking time doesn't include cooking the macaroni.
- 1⁄3 cup sour cream
- 1⁄3 cup milk
- 1 cup shredded sharp cheddar cheese
- 3⁄4 cup elbow macaroni, cooked and drained
- 2 tablespoons chopped onions (optional)
- In a bowl, combine the sour cream and milk. Stir in the cheese, macaroni and onion. Transfer to a greased 2-1/2 cup baking dish; sprinkle with paprika. Cover and bake at 325* for 25 minutes or until heated through.
This was very good. The sour cream added an interesting texture a just a little something to it. I left out the onions due to personal preference.
Made for 1~2~3 Hits. This was very easy, but we like the traditional cheese sauce better. Thanks for posting this NELady!
This is very good! I've never used sour cream in a recipe for mac and cheese but it makes it very simple! This is creamy and cheesy. Thanks for sharing!
