I poured the coconut on top of the fish with a pinch of dry mustard, then the chopped nuts. I also broiled the top so the nuts browned. This was delicious. I served couscous with the fish.

  1. Preheat oven to 350.
  2. Cut Mahi Mahi into 1" wide pieces and place pieces in a single layer in a 13" x 9" baking dish. Sprinkle with salt and pepper.
  3. Sprinkle 1/2 cup chopped macadamia nuts on top of Mahi Mahi. Pour coconut milk over top.
  4. Bake at 350 for about 18 minutes or until opaque.
  5. Sprinkle with remaining 1/2 cup nuts just before serving.
