This recipe is from my Church Suppers Cookbook.
- 6 ounces fresh mahi mahi
- 1 tablespoon olive oil
- salt and pepper
- 1 ounce macadamia nuts
- 1 ounce jalapeno seasoned bread crumbs (panko) or 1 ounce if this is not available use Italian seasoned breadcrumbs (panko)
- Coat the mahi mahi steaks with oil and season with salt and pepper. Combine the nuts and the crumbs; dredge the steaks in the mixture. Heat a cast iron pan or nonstick pan and sear the mahi mahi over medium heat 3 minutes each side for medium rare. garnish with asparagus.
