  • Place macadamia nuts in the bowl of the food processor and use the pulse button to crush. Transfer to a bowl. Add breadcrumbs. Season with salt and pepper.
  • Place flour on a plate. Lightly whisk eggs in a bowl. Dip chicken into flour. Shake off excess. Dip in egg, then macadamia mixture, pressing firmly to coat.
  • Heat olive oil in a frying pan over medium heat. Cook chicken for 3 minutes on each side or until golden and cooked through.

  1. This was really delicious (despite my poor photo). I always have such a tough time with breaded dishes, and this was no different. The macadamia crust fell off during searing, so I just scooped the breading out of the pan and piled it on top of each chicken breast when I served it. It was still quite good and got lots of oohs and aahs from my husband and boys. It's just not as appealing looking as it would have been if the breading stayed in place during cooking. It was still quite tasty though, and I'm glad I made this recipe. Made for Susie's World Tour 2018 (Australia).

  3. I used the thin cut chicken breasts for this, and the coating was wonderful on them. I did increase the nuts a bit and decreased the breadcrumbs with no problem. Just delicious!! Thanks for sharing!! Made for FYC tag game.

  5. Your chicken was a real big heat.<br/>I used chicken breast which I halved horizontally in two pieces.<br/>The nuts gave a special flavor and a crunchy structure, the breast was moist, tender and trough.<br/>Really perfect, thanks for you recipe.
