Recipe from Taste.com which says this an Aussie favorite. Posted for ZWT-8-AUS/NZ.
- 100 g macadamia nuts
- 1 cup fresh breadcrumb
- 1⁄2 cup all-purpose flour
- 2 eggs
- 4 chicken breast fillets
- 2 tablespoons olive oil
- Place macadamia nuts in the bowl of the food processor and use the pulse button to crush. Transfer to a bowl. Add breadcrumbs. Season with salt and pepper.
- Place flour on a plate. Lightly whisk eggs in a bowl. Dip chicken into flour. Shake off excess. Dip in egg, then macadamia mixture, pressing firmly to coat.
- Heat olive oil in a frying pan over medium heat. Cook chicken for 3 minutes on each side or until golden and cooked through.
I used the thin cut chicken breasts for this, and the coating was wonderful on them. I did increase the nuts a bit and decreased the breadcrumbs with no problem. Just delicious!! Thanks for sharing!! Made for FYC tag game.
This was a very good coating, I used it to coat Ahi tuna instead of chicken and the combination was delicious. Made for ZWT 8 for The Wild Bunch
Your chicken was a real big heat.
I used chicken breast which I halved horizontally in two pieces.
The nuts gave a special flavor and a crunchy structure, the breast was moist, tender and trough.
