Mac & Cheese With Veggies

"Love Mac & cheese and found this one on line from Just a Pinch Recipe site and it's over the top delicious, colorful with all the veggies and creamy smooth. I did add 1/2 a red sweet pepper for added color and thinking pimentos might be good too. It will make it's own sauce while baking"

• Yields: 1 casserole
• Serves: 12

ingredients

• 16 ounces elbow macaroni, cooked al dente
• 1 large onion, finely chopped
• 1 green pepper, chopped
• 2 stalks celery, chopped
• 1 (4 ounce) can green chilies, drained
• 1⁄2 cup butter
• 6 tablespoons all-purpose flour
• 2 cups heavy whipping cream
• 1 cup sour cream
• 4 cups cheddar cheese, shredded (or you can use a combo of different cheeses)
• 1 1⁄2 teaspoons dry mustard
• 1⁄2 teaspoon salt
• 1⁄2 teaspoon white pepper
• 1⁄2 teaspoon white pepper

directions

1. Combine all infredients.
2. Put into a greased casserole dish.
3. Cut butter into small pieces and stir with warm macaroni to melt it.
4. Bake at 350 for 1 hour.
5. You might have to cover with foil if it start to get too brown.
