I used sake instead of the michiu and it came out very well. The alcohol cooks out and leaves the sweet flavors of the sake and the sesame oil in a kind of dark caramel sauce. The chicken was very good and I would make it again. Made for Chinese/Vietnamese New years Tag Game 2012.

  1. Heat oil in a skillet or wok over high heat; add ginger and cook, stirring often, until fragrant, about 1 minute.
  2. Add chicken and toss to coat with the oil, stirring occasionally, until lightly browned, about 7 minutes.
  3. Remove breast meat and transfer to a plate.
  4. Add wine and bring to a boil; reduce to medium low and simmer, covered, about 30 minutes, stirring occasionally.
  5. Return breast meat and cook 15 minutes; season with salt.
