This was such a quick and simple lunch to make. I made it up ahead of time and then at lunchtime I cut up some romaine and put the chicken salad on top. I also garnished with extra peach slices. This is something that will be wonderful to have during the upcoming warmer months. Next time I may add some red onion for more color and a little bit more crunch. Thanks for posting. A great way to enjoy leftover chicken. I thought it needed something to add a little more crunch and flavor, so I added two chopped scallions. Loved it! Thanx! This will go into my "leftovers" cookbook.
This was so good. I used leftover tuirkey. I loved the fact that it didn't have a lot of ingredients. Very simple to make. I will be making this again when I have ledtover chicken or turkey. Thanks for sharing your recipe. Made for PAC Spring '08

Made this for my dd to take for lunch. She loves chicken salad but is not so crazy about peaches! She really enjoyed this- tho I think she picked the peaches out- but the sweetness of them was still there! Great recipe! Love that I can use leftover chicken here! Wonderful tip! Thanks!
Wow! Unbelievably Good! I would have never thought to put peaches (canned peaches yet!)and chicken together. I placed it in a toasted wrap with arugula skipping the egg. Very quick and easy! Thanks for the refreshing lunch.
Yum! This is a deliciously different way to use up leftover chicken. I love peaches, but never would have thought to use them in a chicken salad. They give it a great sweetness and flavor. I made this with chicken and used only the white from the egg to make it healthier. It made a lot more than 2 servings in my mind, which is a good thing!
